These miniature chocolate heart wafer cookies are filled with raspberry frosting and make a perfect gift for Valentine's Day.

Ingredients

Cookie

1 3/4 cups
all-purpose flour
1/4 cup
unsweetened cocoa
1 cup
Land O Lakes® Butter, softened
1/3 cup
Land O Lakes® Heavy Whipping Cream
Sugar

Filling

3/4 cup
powdered sugar
1/4 cup
Land O Lakes® Butter, softened
2 tablespoons
mashed fresh raspberries*
1/8 teaspoon
raspberry or almond extract
 
*Substitute 1 1/2 teaspoons strawberry syrup.

Directions

  1. Combine flour and cocoa powder i medium bowl. Cut in butter using pastry blender or 2 forks until mixture resembles coarse crumbs. Stir in whipping cream just until mixture comes together. Divide dough in thirds. Wrap each in plastic food wrap and refrigerate for 1 hour or overnight.
  2. Heat oven to 375°F.
  3. Roll out dough on lightly floured surface (keeping remaining dough refrigerated) to 1/4-inch thickness. Cut with 1 1/2-inch heart shaped cookie cutter. Coat both sides with sugar. Place on parchment lined baking sheet. Prick several times with fork.
  4. Baked 6-8 minutes. Remove from cookie sheet immediately and place on cooling rack
  5. Combine powdered sugar, 1/4 cup butter, mashed raspberries and raspberry extract in bowl. Beat at medium speed, scraping bowl often, until light and fluffy.
  6. Place 1 teaspoon filling onto 1 cookie, bottom-side up. Top with second cookie, bottom-side down.

Can substitute any coffee flavoring liquid that goes with chocolate, i.e., hazelnut, creme de menthe, etc. Roll dough out in sugar instead of flour and place sugar side up on parchment paper.
