Ingredients

Orange Sugar

1/3 cup
sugar
1 teaspoon
freshly grated orange zest
 

Cookie

1 cup
sugar
3/4 cup
Land O Lakes® Butter, softened
1
large Land O Lakes® Egg
2 cups
all-purpose flour
1 1/2 teaspoons
baking powder
1/4 teaspoon
baking soda
1/2 cup
sweetened dried cranberries, chopped
1/2 cup
chopped macadamia nuts
1 tablespoon
freshly grated orange zest

Directions

  1. Heat oven to 350°F.
  2. Combine all orange sugar ingredients in bowl; stir until well mixed. Set aside.
  3. Combine 1 cup sugar, butter and egg in bowl; beat at medium speed until creamy. Add flour, baking powder and baking soda; beat at low speed until well mixed. Add all remaining ingredients. Continue beating just until mixed.
  4. Shape dough into 1-inch balls; roll balls in orange sugar. Place 2 inches apart onto ungreased cookie sheets. Flatten with bottom of glass to 1 1/2-inch circles.
  5. Bake 7-11 minutes or until edges are lightly browned. Do not over bake. Cool 1 minute on cookie sheet; remove to cooling rack.

Recipe Tips

- To prevent cranberries from sticking to knife when chopping; spray knife with no-stick cooking spray.

- To prevent hands from getting too sugary, shape dough into enough balls to fill one cookie sheet, then roll balls in orange sugar.

I made these cookies with oranges grown in my own back yard. Wow... they are amazing! I followed the recipe exactly, and everything turned out beautifully. The orange sugar coating is a nice touch. Since oranges and the color red are auspicious in the Chinese culture, these cookies with orange zest and red dried cranberries are perfect for Chinese New Year. I will make these cookies to celebrate the year of the Ram in the next few days!

The best cookies ever! Since I have a family member with nut allergies, I substituted the macadamia nuts with white chocolate chips. Making a cookie with a little bit of fruit makes it not so guilty. My new favorite cookie!

Loved this receipe. I did also change it up to create another one. I replaced Orange with lemon, cranberries with dried blueberries macadamia with almonds very good as well. This recipe is a keeper either way.

I squeeze a little bit of the orange juice (a tablespoon or two) over the cranberries after chopping. This makes them plump slighly and gives the cookie a bit more of an orange flavor. Delish!
