Caramel Rocky Road Bars

Ingredients

Crumb Mixture

2 cups all-purpose flour

1 1/2 cups quick-cooking oats

1 cup sugar

1 cup Land O Lakes® Butter, softened

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup chopped salted peanuts

Filling

1 (17.5-ounce) jar caramel topping

1 cup salted peanuts

4 cups miniature marshmallows

1 1/2 cups milk chocolate chips

How to make

  1. STEP 1

    Heat oven to 350°F. Grease and flour 15x10x1-inch baking pan. Set aside. 

  2. STEP 2

    Combine all crumb mixture ingredients except 1/2 cup chopped peanuts in large bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Stir in 1/2 cup chopped peanuts. Reserve 1 cup crumb mixture; set aside. Press remaining crumb mixture onto bottom of prepared pan. Bake 15-17 minutes or until lightly browned.

  3. STEP 3

    Spread caramel topping evenly over hot, partially baked crust. Sprinkle with 1 cup peanuts, marshmallows and chocolate chips. Crumble reserved crumb mixture over chocolate chips.

  4. STEP 4

    Continue baking 20-25 minutes or until crumb mixture is lightly browned. Refrigerate at least 1 hour or until firm. Cut into bars.

Tip #1

Line pan with greased aluminum foil for easy removal and cutting.

i'm a middle school boy who made these for my friends. everyone liked them i enjoyed these alot and this is also the first time i made this recipe and i loved it but i would cut back on the marshmellows a little maybe two cupsand there was a little change instead of regular caramel I used butterscotch caramel but this is a ***** recipe i'm sure you and your family would enjoy them thanxs! Oh my gosh! This recipe is out of this world!!!!!! Easy to make and was a big hit at our family gathering. I will definately be making these again. Try them....you won't be disappointed.
