Coconut Cream Bars

2/3 cup firmly packed brown sugar

1/2 cup Land O Lakes® Butter, softened

2 large Land O Lakes® Eggs

1 teaspoon vanilla

3/4 cup all-purpose flour

3/4 cup uncooked quick-cooking oats

1 (3.4-ounce) package instant coconut cream pudding and pie filling mix


1 1/2 cups powdered sugar

3 tablespoons Land O Lakes® Butter, softened

1 to 2 tablespoons milk

1/4 cup sweetened flaked coconut

How to make

  1. STEP 1

    Heat oven to 350°F. Grease 8-inch square baking pan with no-stick cooking spray. Set aside.

  2. STEP 2

    Combine brown sugar and 1/2 cup butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla; mix well. Reduce speed to low; add flour, oats and pudding mix. Beat until well mixed.

  3. STEP 3

    Spread mixture into prepared pan. Bake 23-27 minutes or until toothpick inserted in center comes out clean. Cool completely.

  4. STEP 4

    Combine powdered sugar and 3 tablespoons butter in bowl. Beat at medium speed until well mixed. Add enough milk for desired spreading consistency. Spread frosting over cooled bars; sprinkle with coconut.

These bars were good, but lacking in coconut flavor. The coconut pudding mix makes the bars moist, but doesn't add much coconut flavor. I would recommend adding a 1/2 cup shredded coconut, plus 1/2 tsp- 3/4 tsp coconut extract to the bar for a more pronounced flavor. A splash of vanilla or coconut extract in the frosting would be yummy too!

I really liked these bars. I LOVE coconut though so I added a half cup to the bars also and it turned out great.
