Ingredients

3/4 cup
firmly packed brown sugar
1/2 cup
Land O Lakes® Butter, softened
3 medium (1 1/2 cups)
ripe bananas, mashed
2
large Land O Lakes® Eggs
1 teaspoon
vanilla
1 cup
all-purpose flour
1 cup
whole wheat flour
1 teaspoon
baking soda
1/4 teaspoon
salt
1/2 cup
mini real semi-sweet chocolate chips

Directions

  1. Heat oven to 350°F. Place paper baking cups into muffin pan cups; set aside. 
  2. Combine brown sugar and butter in bowl. Beat at medium speed, scraping bowl often, until mixture is creamy. Add bananas, eggs and vanilla; continue beating until well mixed.
  3. Combine flour, whole wheat flour, baking soda and salt in another bowl. Stir flour mixture into banana mixture just until moistened. Gently stir in chocolate chips.
  4. Spoon batter into prepared muffin pans. Bake 18-25 minutes or until light golden brown. Let stand 5 minutes; remove from pans.

Got up at 7am and made these for a quick and easy breakfast. Deliciously awesome is all I can say. The cooking time was a wee bit shorter for me at about 12-15 minutes. Overall though, a healthy and hearty breakfast. Thanks Land of Lakes!

This recipe is quick and easy enough to make before going in to the office. It is a favorite of mine and has been used countless time. The chocolate is perfect with the bananas, and sometimes I add chopped nuts to the recipe to give them some extra crunch.

I've made this many times. It's handy to freeze really ripe bananas to thaw and mash when you need them. I make them in mini bundt silicone pans, remove them while they're warm, and drop exactly 5 milk chocolate chips in the hole in the top. As soon as I've filled them I go back to the first one and spread the now melted chocolate using a toothpick. Everyone loves that little surprise.
