3/4 cup firmly packed brown sugar
1/2 cup Land O Lakes® Butter, softened
3 medium (1 1/2 cups) ripe bananas, mashed
2 large Land O Lakes® Eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup mini real semi-sweet chocolate chips
STEP 1
Heat oven to 350°F. Place paper baking cups into muffin pan cups; set aside.
STEP 2
Combine brown sugar and butter in bowl. Beat at medium speed, scraping bowl often, until mixture is creamy. Add bananas, eggs and vanilla; continue beating until well mixed.
STEP 3
Combine flour, whole wheat flour, baking soda and salt in another bowl. Stir flour mixture into banana mixture just until moistened. Gently stir in chocolate chips.
STEP 4
Spoon batter into prepared muffin pans. Bake 18-25 minutes or until light golden brown. Let stand 5 minutes; remove from pans.
