1/4 cup sugar
1/4 cup white grape juice
1 to 2 tablespoons freshly grated lime zest
1 tablespoon fresh lime juice
1 cup Land O Lakes® Heavy Whipping Cream
1 (10-inch) angel food cake, cut into 16 pieces
1 pint (2 cups) fresh blueberries
Freshly grated lime zest, if desired
*Substitute 8 individual sponge cake shells or 8 slices pound cake.
Combine all lime cream ingredients except whipping cream in bowl; stir until sugar is dissolved. Cover; let stand about 2 hours to blend flavors.
Beat whipping cream in bowl on high speed at serving time, scraping bowl often, until soft peaks form. Continue beating, gradually adding lime mixture, until stiff peaks form.
Place 2 pieces cake onto each individual serving plate; top each serving with about 1/4 cup lime cream mixture and 1/4 cup blueberries. Garnish with lime zest, if desired.
