1/2 cup Land O Lakes® Garlic & Herb Butter Spread, melted
1 teaspoon salt
1/2 teaspoon pepper
6 medium (6 cups) baking potatoes, washed, unpeeled, cut into 1/8-inch slices
1/3 cup chopped red bell pepper
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Heat oven to 350°F.
Combine, butter, salt and pepper in bowl. Add potatoes; toss to coat.
Layer half of potatoes and red bell pepper in ungreased 13x9-inch baking pan; sprinkle with half of Parmesan cheese. Layer with remaining potatoes and red bell pepper.
Cover with aluminum foil. Bake 30 minutes. Uncover; sprinkle with remaining cheese. Continue baking, uncovered, 20-30 minutes or until potatoes are fork tender.
Sprinkle with parsley before serving.
