Ingredients

1/2 cup Land O Lakes® Garlic & Herb Butter Spread, melted

1 teaspoon salt

1/2 teaspoon pepper

6 medium (6 cups) baking potatoes, washed, unpeeled, cut into 1/8-inch slices

1/3 cup chopped red bell pepper

1/4 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine melted butter, salt and pepper in bowl. Add potatoes; toss to coat.

  3. STEP 3

    Layer half of potatoes and bell pepper in ungreased 13x9-inch baking pan; sprinkle with half of Parmesan cheese. Layer with remaining potatoes and bell pepper.

  4. STEP 4

    Cover with aluminum foil. Bake 30 minutes. Uncover; sprinkle with remaining cheese. Continue baking, uncovered, 20-30 minutes or until potatoes are fork tender.

  5. STEP 5

    Sprinkle with parsley before serving.
