Ingredients

2 tablespoons
Land O Lakes® Butter
8 ounces (2 1/2 cups)
mushrooms (porcini, shiitake, oyster, crimini etc.), finely chopped
1/4 cup
finely chopped green onions
2 teaspoons
finely chopped fresh garlic
1/3 cup
chicken broth
4 ounces
cream cheese or Neufchatel cheese, softened
2 tablespoons
Land O Lakes® Butter, softened
2 tablespoons
roasted red pepper*, chopped
1 tablespoon
chopped chives or green onion
Chopped green onion, if desired
Chopped red bell pepper, if desired
 
Crackers or cracker bread
 
*Substitute 2 tablespoons chopped pimiento.

Directions

  1. Melt 2 tablespoons butter in 10-inch skillet over medium-high until sizzling; add mushrooms. Cook, stirring occasionally, 2 minutes. Add 1/4 cup green onions and garlic. Continue cooking, stirring constantly, 1 minute. Add chicken broth. Continue cooking, stirring occasionally, 3-4 minutes or until liquid is absorbed. Cool completely.
  2. Place mushroom mixture into bowl; add cream cheese, softened butter, red pepper and chives. Beat at low speed, scraping bowl often, until well mixed.
  3. Spoon mixture into serving dish. Cover; refrigerate at least 1 hour.
  4. Garnish with chopped green onion and roasted red pepper, if desired. Serve with crackers or cracker bread.

Recipe Tips

If using dried wild mushrooms, follow soaking directions on package. Drain well before chopping.
