Quick, grilled bruschetta appetizer using cheese and fresh fruit.

Salsa
1/2 cup finely chopped strawberries
1/4 cup finely chopped mango
1/4 cup seeded, finely chopped jalapeño peppers
1/4 cup finely chopped pineapple
Bruschetta
2 tablespoons Land O Lakes® Butter, melted
12 (1/2-inch) slices baguette, cut diagonally
6 (3/4-inch) slices Land O Lakes® Deli American, cut in half lengthwise
STEP 1
Heat gas grill to medium or charcoal grill until coals are ash white.
STEP 2
Combine all salsa ingredients in bowl; set aside.
STEP 3
Brush baguette slices lightly on both sides with melted butter; place onto grill. Grill until browned. Turn bread slices; top each bread slice with 1 piece cheese. Continue grilling until cheese begins to melt.
STEP 4
Remove toasts from grill; top each with heaping tablespoon of salsa. Serve immediately.

This recipe is excellent for a cool summer treat. We had a birthday party and served snacks such as this instead of cake and ice cream. This particular recipe was a big hit - I will make it again.
