Ingredients

4 (4-ounce)
boneless skinless chicken breasts
1/2 cup
shredded Parmesan cheese
1 teaspoon
dried basil leaves
1/2 teaspoon
finely chopped fresh garlic
1/4 teaspoon
dried oregano leaves
1/4 cup
Land O Lakes® Butter, melted

Directions

  1. Heat oven to 400°F.
  2. Pound chicken breasts with rolling pin or meat mallet to 1/2-inch thickness; set aside.
  3. Combine cheese, basil, garlic and oregano in pie pan or shallow bowl. Place melted butter in another pie pan or shallow bowl. Dip chicken in butter; coat with cheese mixture.
  4. Place chicken into ungreased 8- or 9-inch square baking dish. Bake 17-22 minutes or until chicken until internal temperature reaches at least 165°F and juices run clear when pierced with a fork.
  5. Variation: For 2 Servings:
  6. Combine 1/4 cup shredded Parmesan cheese, 1/2 teaspoon dried basil, 1/4 teaspoon finely chopped fresh garlic and 1/8 teaspoon dried oregano leaves in pie pan or shallow bowl. Place 2 tablespoons melted butter in another pie pan or shallow bowl. Dip 2 chicken breasts in butter; coat with cheese mixture. Bake as directed.

Recipe Tips

To freeze and bake later, prepare chicken as directed but do not bake. Cover tightly with aluminum foil; freeze up to 3 months. To thaw, place in refrigerator for 24 hours or until thawed. Heat oven to 400°F. Bake, uncovered, 17-22 minutes or internal temperature reaches at least 165°F. and juices run clear when pierced with a fork.

I wanted a recipe that called for basil and chicken breasts since I had tons of basil in my garden and had bought chicken on sale in excess. The first time I made this I had made this for my small children and their friends. They all loved it and some went back for seconds! Unbelievable aroma throughout the house! Made it the following week since it was soooo good-this time my husband really enjoyed it,too! Easy, aromatic, and delicious!!!

Purchase chicken breasts each time they are on sale & basically for salads. However, since I was over-shopping on breasts, I found this recipe on the inside of LOL butter. This was something that sounded like it would be different and it was very easy to make. When the baking was completed, it left the most wonderful aroma in my kitchen & the flavor was heavenly! The next time I prepare this dish, I will increase the bread crumbs from 1/2 cup to 1 cup for better coverage. The parsley and garlic really brought the flavors out!

One of the easiest chicken recipes ever and tasted fantastic. Thank you for the "recipe for 2" option. I used my fresh garden herbs instead of the dried this recipe called for, and used a covered saute pan instead of heating up the oven. Turned out wonderful. Will definitely make this again.

I would suggest if making this recipe that the pieces of chicken be close to the 4 oz. Mine were and were beautifully done in 25 minutes. Really easy and tasty.

Tip: To make extra special, fresh grate your cheese. This was so easy to make, was surprised how tasty it is. An instant family favorite- for cook and diners.
