Creamy mashed potatoes made with cream cheese, half & half and green onions turn ordinary mashed potatoes into extra special mashed potatoes.

Ingredients

2 pounds
potatoes, peeled, cut into 2-inch pieces
1/4 teaspoon
salt
1/2 cup
sour cream
1/2 cup
Land O Lakes® Half & Half
2 tablespoons
Land O Lakes® Butter, softened
1/8 cup
finely chopped green onions
3 ounces
cream cheese, softened
1/4 teaspoon
pepper
1/2 teaspoon
salt

Directions

  1. Place potatoes in 4-quart saucepan; add 1 teaspoon salt and enough water to cover. Bring to boil; continue cooking over medium heat 15-20 minutes or until fork tender; drain.
  2. Combine cooked potatoes and all remaining ingredients in bowl. Mash with potato masher until well mixed.

Recipe Tips

- This recipe can be easily doubled to serve a crowd.

- To make ahead, pour mashed potatoes into 1 1/2-quart ungreased casserole dish. Cover; refrigerate. To reheat in oven, place 1 tablespoon butter, cut into small cubes over potatoes, if desired. Cover with aluminum foil; bake in 350°F. oven 30 minutes or until heated through. To reheat in microwave, cover with vented plastic food wrap. Microwave 5 minutes; stir. Continue microwaving 3-4 minutes or until heated through. Top with an additional 1 tablespoon butter, cut into small cubes, if desired.

This is a great recipe and it can be made the day before- especially when making a big dinner for Thanksgiving or Christmas. It can also be cut in half or doubled - or adjusted to serve as few or many as you want. Cover and refrigerate and then reheat in oven or microwave. I haven't tried freezing it, but I will test a small amount when I make it for Thanksgiving.
