Ingredients

2 pounds potatoes, peeled, cut into 2-inch pieces

1 teaspoon salt

1/2 cup sour cream

1/2 cup Land O Lakes® Half & Half

2 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt

3 ounces cream cheese, softened

2 tablespoons finely chopped green onions

1/2 teaspoon salt

1/4 teaspoon pepper

How to make

  1. STEP 1

    Place potatoes in 4-quart saucepan; add 1 teaspoon salt and enough water to cover. Bring to a boil; continue cooking over medium heat 15-20 minutes or until fork tender; drain.

  2. STEP 2

    Combine potatoes and all ingredients except green onions, salt and pepper. Add green onions, salt and pepper; stir to combine.

Tip #1

To make ahead, pour mashed potatoes into 1 1/2-quart ungreased casserole dish. Cover; refrigerate. To reheat in oven, place 1 tablespoon Butter with Olive Oil & Sea Salt, cut into small cubes, over potatoes, if desired. Cover with aluminum foil; bake in 350°F oven 30 minutes or until heated through. To reheat in microwave, cover with vented plastic food wrap. Microwave 5 minutes; stir. Continue microwaving 3-4 minutes or until heated through. Top with an additional 1 tablespoon Butter with Olive Oil & Sea Salt, cut into small cubes, if desired.
