Carrots, mashed with light butter and cinnamon and sweetened with honey, make a comforting, yet low-fat side dish.
1 pound carrots, peeled, cut into 1-inch pieces
1 teaspoon salt
2 tablespoons Land O Lakes® Light Butter
1 teaspoon honey
1 teaspoon lemon juice
1/4 teaspoon ground cinnamon
1/4 teaspoon pepper
Place carrots and 3/4 teaspoon salt in 3-quart saucepan; add enough water to cover carrots by 2 inches. Cook over medium-high heat 7-9 minutes or until water comes to a boil.
Reduce heat to medium; cook 20-25 minutes or until carrots are tender. Drain carrots; return to pan.
Add remaining salt and all remaining ingredients; mash with potato masher until smooth.

It was a great recipe! My mother and I made this for the whole family on Thanksgiving, and it was a huge hit. We did make minor changes, instead of 2 tablespoons of butter we used two tubs of butter, we didn't have any honey, so we used bacon grease we had from breakfast that morning. Lastly, we decided to substitute the carrots with golden potatoes. I think this recipe will be used again and again. YUM!
Family did not like this dish. Plain old butter, salt and pepper turned out best.
