Lemon Paprika Tilapia over Rice Pilaf

Ingredients
Fish
3 tablespoons Land O Lakes® Butter
1 tablespoon freshly grated lemon zest
12 teaspoon cracked black pepper
12 teaspoon paprika
14 teaspoon salt
1 pound whole fresh tilapia fillets
Rice
1 tablespoon Land O Lakes® Butter
1 small (12 cup) onion, chopped
14 cup chopped carrot
14 cup chopped celery
12 teaspoon salt
2 (10-ounce) packages frozen microwaveable white rice
How to make

STEP 1
Melt 3 tablespoons butter in 12-inch nonstick skillet over medium-low heat, stirring occasionally, until sizzling. Stir in lemon zest, pepper, paprika and 1/4 teaspoon salt. Add tilapia fillets. Cook, turning once, 10-12 minutes or until fish flakes easily with fork and is light golden brown. Remove from pan. Keep warm.

STEP 2
Melt 1 tablespoon butter in same skillet. Add onion, carrot, celery and 1/2 teaspoon salt. Cook 3-5 minutes or until onion is translucent and carrot and celery are crisply tender.

STEP 3
Prepare rice according to package directions, while vegetables are cooking. Stir rice into cooked vegetables until combined. Continue cooking until heated through.

Place rice mixture onto platter. Top with fish.
