8 slices bacon
1 medium Yukon Gold potato
5 tablespoons Land O Lakes® Butter, softened
8 slices sourdough bread
8 (3/4-ounce) slices Land O Lakes® Deli American
1/3 cup sour cream
1 medium (1/2 cup) tomato, seeded, chopped
1/4 cup chopped green onions
Heat oven to 400°F.
Place bacon slices onto ungreased baking sheet; bake to desired crispness.
Slice potato lengthwise into 8 (1/4-inch-thick) slices; pat dry with paper towel.
Melt 1 tablespoon butter in 12-inch skillet over medium heat until sizzling. Add potato slices; cook, turning once, 8-10 minutes or until golden brown and tender. Remove from pan; pat dry on paper towel. Wipe out skillet; set aside.
Spread 1 side of each bread slice with 1/2 tablespoon butter. Place 1 slice cheese onto unbuttered side of 4 bread slices. Evenly spread sour cream over cheese slice; layer with 2 tablespoons tomato, 1 tablespoon green onion, 2 slices potato, 2 slices bacon and 1 slice cheese. Top with remaining bread slices, buttered-side up.
Heat 12-inch skillet over medium heat.
Place 2 sandwiches into skillet. Cook, turning once, 8-10 minutes or until golden brown and cheese is melted. Repeat with remaining sandwiches.
Place assembled sandwich in air fryer basket. Cook at 360°F for about 5 minutes until cheese is melted. Flip the sandwich and continue cooking another 5-7 minutes or until bread is crisped and golden and cheese is melted. Depending on the size of your air fryer, you may be able to cook more than one sandwich at a time.
