8 slices bacon
1 medium Yukon Gold potato
5 tablespoons Land O Lakes® Butter, softened
8 slices sourdough bread
1/3 cup sour cream
8 (3/4-ounce) slices Land O Lakes® Deli American
1 medium (1/2 cup) tomato, seeded, chopped
1/4 cup chopped green onion
Heat oven to 400°F.
Place bacon slices onto ungreased baking sheet; bake to desired crispness.
Slice potato lengthwise into 8 (1/4-inch thick) slices; pat dry with paper towel.
Melt 1 tablespoon butter in 12-inch skillet over medium heat until sizzling. Add potato slices; cook, turning once, 8-10 minutes or until golden brown and tender. Remove from pan; pat dry on paper towel. Wipe out skillet; set aside.
Spread 1 side of each bread slice with 1/2 tablespoon butter. Place 1 slice cheese onto unbuttered-side of 4 slices bread. Evenly spread sour cream over cheese slice; layer with 2 tablespoons tomato, 1 tablespoon green onion, 2 slices potato, 2 slices bacon, and 1 slice cheese. Top with remaining bread slices, buttered-side up.
Heat 12-inch skillet over medium heat.
Place 2 sandwiches into skillet. Cook, turning once, 8-10 minutes or until golden brown and cheese is melted. Repeat with remaining sandwiches.
