Ingredients

1/4 cup Land O Lakes® Cinnamon Sugar Butter Spread

1 small (1/2 cup) yellow onion, thinly sliced

1 medium (1 cup) red bell pepper, cut into strips

1 pound boneless skinless chicken breasts, cut into 1-inch pieces

1 teaspoon finely chopped fresh garlic

1/2 teaspoon salt

1/8 teaspoon ground red pepper

1/4 cup orange juice

1/4 cup raisins

1/4 cup chopped fresh cilantro

 

Cooked rice or couscous, if desired

How to make

  1. STEP 1

    Melt Cinnamon Sugar Butter Spread in 12-inch skillet until sizzling; add onion. Cook over medium-high heat 2-3 minutes or until onion is crisply tender; add bell pepper. Continue cooking 2-3 minutes or until bell pepper is crisply tender.

  2. STEP 2

    Add chicken, garlic, salt and red pepper. Cook, stirring occasionally, 5-7 minutes or until chicken is browned and no longer pink. Add orange juice and raisins. Cook, stirring occasionally, 1-2 minutes or until heated through. Stir in cilantro.

  3. STEP 3

    Serve immediately over cooked rice or couscous, if desired.

I made this for dinner tonight. I had the ingredients and it looked and sounded interesting. It actually came out great! My family loved it! My dad said it tasted very Moroccan and my husband posted on Facebook how much he loved it! My 6 year old, who can be a picky eater at times, ate every drop. He helped me cut the veggies, which, incidentally, he said he hates red peppers, and then ended up eating them raw AND cooked! I added a few of my own things--I seasoned the chicken with garlic powder and oregano; I didn't have fresh cilantro so I used the flakes; like another reviewer, I had the butter but not cinnamon sugar butter so I added some cinnamon and a little bit of sugar to the butter as it was melting; and instead of rice or couscous, I made it with spaghetti. It came out really tasty. My only comment, which prevented me from giving it 5 stars, was that I found it a little dry. I would prefer more sauce at the end. Maybe I'll add more butter next time, but there definitely will be a next time!

Easy, tasty, served it with couscous and a salad. Will probably make it again in the future.
