Ingredients

Muffins

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

3/4 cup sugar

1/3 cup Land O Lakes® Butter, softened

2 large Land O Lakes® Eggs

2 teaspoons freshly grated lemon zest

1 medium (1 cup) apple, cored, peeled, finely chopped

Topping

1/4 cup sugar

1/4 cup sliced almonds

How to make

  1. STEP 1

    Heat oven to 375°F. Grease or line muffin pan cups with paper baking cups; set aside.

  2. STEP 2

    Combine flour, baking powder, salt and cinnamon in bowl. Set aside.

  3. STEP 3

    Combine sugar and butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Stir in eggs and lemon zest. Continue beating, scraping bowl often, until well mixed. Stir in flour mixture just until moistened. Gently stir in apples. Spoon evenly into prepared muffin pan.

  4. STEP 4

    Sprinkle sugar and almonds evenly on top of each muffin. Bake 18-22 minutes or until lightly browned. Let stand 5 minutes; remove from pans.
