Ingredients

1 1/2 cups
all-purpose flour
1 cup
uncooked quick-cooking oats
3/4 cup
sugar
3/4 cup
sweetened flaked coconut
1 1/2 teaspoons
ground cinnamon
1 teaspoon
baking soda
1/4 teaspoon
salt
3/4 cup
Land O Lakes® Butter, melted
3 medium (1 1/2 cups)
carrots, peeled, shredded
1 large (1 1/2 cups)
apple, peeled, chopped
3
large Land O Lakes® Eggs, slightly beaten
 
Land O Lakes® Butter with Canola Oil

Directions

  1. Combine flour, oats, sugar, coconut, cinnamon, baking soda and salt in bowl; mix well.
  2. Combine butter, carrots, apple and eggs in another bowl; mix well. Add butter mixture to flour mixture; stir just until moistened.
  3. Spoon batter evenly into prepared pan. Bake 18-23 minutes or until toothpick inserted in center comes out clean. Serve warm with Light Butter with Canola Oil.
  4. Heat oven to 375°F. Lightly grease 12 muffin pan cups; set aside.

Had to add about 1/4 cup of water to moisten the mix. My husband laims they are now his all-time favourite!

This is a dense and moist muffin that is great for breakfast or a fast snack on the go. Stores well and is delicious even a week later (assuming you can hide some to make them last that long). Reheats well in a few seconds in a microwave and is great with butter or cream cheese.
