These tender, moist muffins are a special treat any time of the day!
1 1/2 cups all-purpose flour
1 cup uncooked quick-cooking oats
3/4 cup sugar
3/4 cup sweetened flaked coconut
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup Land O Lakes® Butter melted
3 medium (1 1/2 cups) carrots, peeled, shredded
1 large (1 1/2 cups) apple, peeled, chopped
3 large Land O Lakes® Eggs slightly beaten
Land O Lakes® Butter with Canola Oil
Combine flour, oats, sugar, coconut, cinnamon, baking soda and salt in bowl; mix well.
Combine butter, carrots, apple and eggs in another bowl; mix well. Add butter mixture to flour mixture; stir just until moistened.
Spoon batter evenly into prepared pan. Bake 18-23 minutes or until toothpick inserted in center comes out clean. Serve warm with Light Butter with Canola Oil.
Heat oven to 375°F. Lightly grease 12 muffin pan cups; set aside.
Serve with Land O Lakes® Butter with Canola Oil, if desired.
