Oatmeal-Chocolate Peanut Butter Bars

Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup firmly packed brown sugar

1 cup peanut butter

3/4 cup Land O Lakes® Butter, softened

1/4 cup sugar

1 teaspoon vanilla

2 large Land O Lakes® Eggs

2 1/3 cups uncooked quick-cooking oats

1 (12-ounce) package (2 cups) semi-sweet chocolate chips

How to make

  1. STEP 1

    Heat oven to 325°F.

  2. STEP 2

    Combine flour, baking soda and salt in small bowl. Set aside.

  3. STEP 3

    Combine butter, brown sugar, sugar, 1/2 cup peanut butter, and vanilla in large bowl. Beat at medium speed until creamy. Add eggs, one at a time, beating well after each addition. Add flour mixture; beat at low speed until well mixed. Stir in 2 cups oats. Reserve 1 1/2 cups mixture for topping.

  4. STEP 4

    Spread remaining mixture into greased 13x9-inch pan. Carefully spread with remaining peanut butter. Sprinkle with 3/4 cup chocolate chips.

  5. STEP 5

    Combine reserved topping mixture and remaining oats until mixture resembles coarse crumbs. Stir in remaining baking chips. Drop by spoonfuls over filling in pan.

  6. STEP 6

    Bake 28-32 minutes or until top is deep golden brown. Cool completely in pan over wire rack. Cut into bars.
