Ingredients

2 cups
all-purpose flour
1 teaspoon
baking soda
1/2 teaspoon
salt
1 cup
firmly packed brown sugar
1 cup
peanut butter
3/4 cup
Land O Lakes® Butter, softened
1/4 cup
sugar
1 teaspoon
vanilla
2
large Land O Lakes® Eggs
2 1/3 cups
uncooked quick-cooking oats
1 (12-ounce) package (2 cups)
real semi-sweet chocolate chips

Directions

  1. Heat oven to 325°F.
  2. Combine flour, baking soda and salt in small bowl. Set aside.
  3. Combine butter, brown sugar, sugar, 1/2 cup peanut butter and vanilla in large bowl. Beat at medium speed until creamy. Add eggs, one at a time, beating well after each addition. Reduce speed to low; add flour mixture. Beat until well mixed. Stir in 2 cups oats by hand. Reserve 1 1/2 cups mixture for topping.
  4. Spread remaining mixture into greased 13x9-inch pan. Carefully spread with remaining peanut butter. Sprinkle with 3/4 cup chocolate chips.
  5. Combine reserved topping mixture and remaining oats until mixture resembles coarse crumbs. Stir in remaining baking chips. Drop by spoonfuls over filling in pan.
  6. Bake for 28 to 32 minutes or until top is deep golden brown. Cool completely in pan on wire rack. Cut into bars.
