Ingredients

3/4 cup
sugar
1/2 cup
milk
1/2 cup
orange juice
1
large Land O Lakes® Egg
2 tablespoons
Land O Lakes® Butter, melted
2 tablespoons
freshly grated orange zest
2 cups
Gluten-Free Flour Blend (see below)
1 teaspoon
gluten-free baking powder
1/2 teaspoon
baking soda
1/2 teaspoon
salt
1/2 cup
chopped walnuts

Directions

  1. Heat oven to 350°F.
  2. Combine sugar, milk, orange juice, egg, butter and orange zest in bowl. Stir until well combined. Add all remaining ingredients except walnuts; stir until just combined. Stir in walnuts. Pour into greased 8x4-inch loaf pan.
  3. Bake 50-60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan.

Recipe Tips

Gluten-Free Flour Blend: Combine 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour and 1 teaspoon xanthan gum. Use appropriate amount for recipe; store remainder in container with tight-fitting lid. Stir before using.

I made this for a friend that is also dairy intolerant milk for rice milk and the butter for shortening. She thinks it is the greatest and requests it often.

I didn't have the fresh orange peel so used 2 tsp of dried orange peel. The bread was moist and very tastey. It is a winner. Thanks
