Orange & Chocolate Spritz Sandwiches

1 cup Land O Lakes® Butter, softened

3/4 cup sugar

1 large Land O Lakes® Egg

1 teaspoon vanilla extract

1 teaspoon freshly grated orange zest

2 1/4 cups all-purpose flour

1/2 teaspoon salt


1/2 cup bittersweet or semi-sweet chocolate chips

2 teaspoons shortening


Coarse grain sugar

How to make

  1. STEP 1

    Heat oven to 375°F.

  2. STEP 2

    Combine butter and sugar in bowl; beat at medium speed until creamy. Add egg, vanilla and orange zest; continue beating until well mixed. Add flour and salt; beat at low speed until well mixed.

  3. STEP 3

    Place dough into cookie press; form desired shapes, 1 inch apart, onto ungreased cookie sheets. Sprinkle cookies with coarse grain sugar. Bake 8-10 minutes or until cookies are set. Remove to cooling rack. Cool completely.

  4. STEP 4

    Place chocolate chips and shortening in bowl. Microwave, stirring every 15 seconds, 45-60 seconds or until chocolate is melted and mixture is smooth. Spoon 1/2 teaspoon chocolate onto bottom-side of 1 cookie; top with another cookie, bottom-side down. Repeat with remaining cookies. 

Tip #1

Using a cookie press template allows the chocolate to show both on the edges and through the open areas of the cookie sandwich.
