This great “no-bake” bar is made with peanut butter and marshmallows and is a perfect anytime snack.

Ingredients

Bar

3 cups
miniature marshmallows
1 cup
crunchy peanut butter
1/2 cup
Land O Lakes® Butter
4 1/2 cups
crisp rice cereal

Filling

2/3 cup
strawberry, apricot or peach jam

Topping

1/2 cup
milk or semi-sweet chocolate baking chips
1 tablespoon
crunchy peanut butter
2 teaspoons
shortening

Directions

  1. Melt marshmallows, 1 cup peanut butter and butter in 3-quart saucepan over low heat, stirring constantly, 4-5 minutes or until smooth. Add cereal; quickly stir until well coated.
  2. Press mixture into ungreased 11x7-inch pan. Spoon jam by teaspoonfuls over hot cereal mixture; gently spread over top.
  3. Melt chocolate chips, 1 tablespoon peanut butter and shortening in 1-quart saucepan over low heat, stirring occasionally, 2-4 minutes or until smooth. Gently spread over jam layer.
  4. Refrigerate 2 hours or until chocolate layer is firm. Cut into bars.

These were a huge hit at a family pool party. Had several requests for the recipe, and turns out we were not the only GF family there so they were appreciated even more! I spinkled sweetend coconut flakes on top of half the batch, and those went first!

I made these just for me, but I took some to co-workers. Co-workers loved them and so did I. I like them because they did not taste like they were gluten free and I have celiac disease, everything I eat needs to be without gluten. Everyone wanted the recipe.
