Roasted Honey Carrots

1 tablespoon firmly packed brown sugar

2 tablespoons Land O Lakes® Fresh Buttery Taste® Spread

2 tablespoons honey

4 cups baby carrots

2 tablespoons water

Salt, if desired

Pepper, if desired

How to make

  1. STEP 1

    Heat oven to 400°F.

  2. STEP 2

    Combine brown sugar, Fresh Buttery Taste® Spread and honey in bowl until smooth; set aside.

  3. STEP 3

    Place carrots and water into ungreased 13x9-inch glass baking pan. Cover with aluminum foil; bake 20-25 minutes or until carrots are slightly softened.

  4. STEP 4

    Increase oven temperature to 450°F. Remove aluminum foil; stir in Fresh Buttery Taste® Spread mixture. Continue baking, uncovered, 10-15 minutes, stirring occasionally, until carrots are glazed and just begin to brown. Season with salt and pepper, if desired.

this is great! i like my carrots soft so i baked it covered for 25, then after raising the temperature I baked for 20 minutes. I used a one pound bag of baby carrots

This recipe is excellent, but I was actually able to one-up it. Instead of water I used orange juice and also used real butter with the honey and brown sugar and added I teaspoon of apple pie spice. I also used regular carrots. Probably around the same amount, 4 cups, sliced in half, then quartered. Absolutely wonderful!

This dish is easy to make, has a wonderful flavor, and goes with beef,pork and chicken. My Grandaughter is going through a I don't like it stage with vegatables but loves this dish and asks for it regularly when she is over for supper.
