Ingredients

Bread

3/4 cup
sugar
1/2 cup
Land O Lakes® Butter, softened
2
large Land O Lakes® Eggs
2 tablespoons
pear nectar or orange juice
1/2 teaspoon
vanilla
1 large (1 1/4 cups)
ripe pear, unpeeled, shredded
1 3/4 cups
all-purpose flour
1 1/2 teaspoons
ground cinnamon
1 1/4 teaspoons
baking powder
1 teaspoon
ground ginger
1/2 teaspoon
salt
1/2 teaspoon
baking soda
1/3 cup
chopped walnuts

Glaze

1/2 cup
powdered sugar
1 to 2 tablespoons
pear nectar or orange juice

Directions

  1. Heat oven to 350°F. Grease 9x5-inch loaf pan; set aside.
  2. Combine sugar and butter in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs, pear nectar and vanilla; continue beating until well mixed. Add shredded pear; continue beating until combined. Reduce speed to low. Add all remaining bread ingredients except walnuts; beat just until blended. Stir in walnuts.
  3. Spoon batter into prepared pan. Bake 50-60 minutes or until toothpick inserted in center comes out clean. Let stand 10 minutes; remove from pan. Cool completely.
  4. Combine all glaze ingredients in small bowl. Drizzle over loaf.

Recipe Tips

For gift giving, make 3 mini loaves instead of one large loaf. Prepare batter as directed above. Spoon into 3 greased (5 1/2x3-inch) mini loaf pans or aluminum foil pans. Bake for 35 to 40 minutes or until toothpick inserted in center comes out clean. Glaze mini loaves as directed above.

I love this recipe! I've made it several times and it even won me a First Place ribbon at the County Fair in the quick breads category!

Was disappointed in flavor. I was hoping for more pear flavor. Yes, I used Pear Necter too. It was moist. I did add dried cranberries. Maybe cranberries were too strong of flavor mixed with the pear?

I was looking at two other pear bread recipes at the same time I was making this. One of them called for 1/4 cup sour cream so I added that. I used fresh orange juice and orange zest. It smelled wonderful while it was baking! I had just used all my confection's sugar on another recipe so instead of the glaze, I will serve with cream cheese for breakfast tomorrow morning! Next time, I"ll try the glaze! Will definitely make this again very soon!
