1 cup Land O Lakes® Butter, softened
1 cup sugar
1 large Land O Lakes® Egg
1 teaspoon peppermint extract
2 1/3 cups all-purpose flour
1/4 teaspoon baking powder
3 drops red food color
3 drops green food color
STEP 1
Combine butter and sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and peppermint extract. Continue beating until well mixed. Add flour and baking powder; beat at low speed until well mixed.
STEP 2
Divide dough into thirds. Add red food color to one-third. Add green food color to another third. Stir each until well mixed. Leave remaining dough white. Wrap each dough in plastic food wrap; refrigerate 1 hour or until firm

Divide each color of dough into thirds. Shape each third into 12x1/2-inch rope on waxed paper. Gently press together 1 pink and 1 green rope. Add 1 white rope; gently press to form clover leaf-shaped multicolored roll. Repeat with remaining dough. Wrap each multicolored roll in plastic food wrap; refrigerate 2 hours or overnight until firm.
STEP 4
Heat oven to 350°F.
STEP 5
Cut rolls into 1/4-inch slices. Place 1 inch apart onto ungreased cookie sheets. Bake 9-12 minutes or until edges are very lightly browned.
