Ingredients

Cake

1 1/3 cups
sugar

large Land O Lakes® Eggs
1/8 teaspoon
salt
1/2 cup
Land O Lakes® Heavy Whipping Cream
6 tablespoons
Land O Lakes® Butter, melted, cooled
3 to 4 tablespoons
freshly grated lemon zest
1 3/4 cups
cake flour
1/2 teaspoon
baking powder

Topping

5 1/3 cups
sliced fresh strawberries
3 cups
Land O Lakes® Heavy Whipping Cream, whipped
8 small
whole fresh strawberries

Directions

  1. Heat oven to 350°F. Grease and flour 9x5-inch loaf pan; set aside.
  2. Beat sugar, eggs and salt in bowl with whisk until foamy. Whisk in 1/2 cup whipping cream, melted butter and lemon zest.
  3. Combine cake flour and baking powder in bowl. Add flour mixture, 1/2 cup at a time, to egg mixture. Gently stir after each addition with whisk.
  4. Pour batter into prepared pan. Bake 45-55 minutes or until toothpick inserted in center comes out clean. (Cake may crack.) Cool 10 minutes; remove from pan. Cool completely.
  5. Slice cake into 16 slices. Place 1 slice onto individual serving plate. Spoon 1/3 cup sliced strawberries over cake; top with 1/2 cup whipped cream. Place 1 slice cake over whipped cream; top with 1/3 cup sliced strawberries and 1/4 cup whipped cream. Garnish with 1 whole strawberry.

This is a great recipe. I do cut sugar to 3/4 cup, add juice of lemon and zest. and double baking powder to 1 teaspoon. More of a pound cake not a shortcake. Excellent with sliced strawberries.

This is an excellent lemon butter shortcake,as in, pound cake. I increase the baking powder to 1 teaspoon and use the juice of a lemon and grated peel. It is my "go to" recipe for all berry shortcakes. Try it, you won't be disappointed!
