1 large Land O Lakes® Egg

1 teaspoon vanilla

1 3/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 teaspoon ground nutmeg

1 large (1 1/2 cups) sweet potato, peeled, finely shredded

2/3 cup chopped walnuts

1 cup powdered sugar

1/4 teaspoon maple flavoring
