8 slices marble rye or rye bread
4 teaspoons Dijon-style mustard
8 (3/4-ounce) slices Land O Lakes® Deli American
20 spinach leaves
8 ounces thinly sliced deli peppered turkey
8 strips roasted red bell pepper
Spread 1 side of 4 bread slices with 1 teaspoon mustard each.
Layer each with 1 slice cheese, 5 spinach leaves, 1/4 turkey, 2 bell pepper strips, 1 slice cheese and remaining bread slices. Spray sandwiches with no-stick cooking spray.
Heat 12-inch skillet over medium heat. Place 2 sandwiches into skillet. Cook, turning once, 4-6 minutes or until sandwiches are golden brown and cheese is melted. Repeat with remaining sandwiches.

These sandwiches turned out fantastic and very satisfying. My husband really enjoyed them, too. They have a superb blend of flavors, and healthy too. I used dark rye bread and honey roasted turkey instead. I'm sending this on to my friends.
