Ingredients

5 pounds (10 cups)
potatoes, peeled, cut into 1-inch pieces
Water
2 teaspoons
salt
4 tablespoons
Land O Lakes® Butter
3 medium (3 cups)
onions, coarsely chopped
1/2 cup
milk
3/4 cup
sour cream
Salt
Pepper

Directions

  1. Place potatoes in 4-quart saucepan or Dutch oven. Cover with water; add salt. Bring to a boil over high heat. Reduce heat to medium; boil potatoes 15-18 minutes or until fork tender. Drain.
  2. Melt 2 tablespoons butter until sizzling in 10-inch nonstick skillet; add onions. Cook over medium heat, stirring occasionally, 15-17 minutes or until onions are brown. Set aside.
  3. Place hot, cooked potatoes into bowl. Add all remaining ingredients; mash with potato masher or beat with hand mixer until smooth. Add salt and pepper to taste. Serve immediately.

My little sister is an avowed onion hater, so I was naughty and didn't tell her that this had onions in it. She loved it, and the rest of the family did, too!

Delicious. Creamy. Not dry at all. Husband loved the onions which he could taste but not too much.
