5 pounds (10 cups) potatoes, peeled, cut into 1-inch pieces
Water
2 teaspoons salt
4 tablespoons Land O Lakes® Butter
3 medium (3 cups) onions, coarsely chopped
1/2 cup milk
3/4 cup sour cream
Salt
Pepper
STEP 1
Place potatoes in 4-quart saucepan or Dutch oven. Cover with water; add salt. Bring to a boil over high heat. Reduce heat to medium; boil potatoes 15-18 minutes or until fork tender. Drain.
STEP 2
Melt 2 tablespoons butter until sizzling in 10-inch nonstick skillet; add onions. Cook over medium heat, stirring occasionally, 15-17 minutes or until onions are brown. Set aside.
STEP 3
Place hot, cooked potatoes into bowl. Add all remaining ingredients; mash with potato masher or beat with hand mixer until smooth. Add salt and pepper to taste. Serve immediately.
