1 1/2 cups chopped cooked chicken
1/2 cup cooked corn
1/2 cup sour cream
1/4 cup chopped red bell pepper
1 (15-ounce) can black beans, drained, rinsed
3 tablespoons chopped cilantro
3 tablespoons taco seasoning
Shredded lettuce
8 taco shells
12 (3/4-ounce) slices Land O Lakes® Deli American, cut in half diagonally
Shredded carrot

STEP 1
Combine chicken, corn, sour cream, bell pepper, beans, cilantro, and taco seasoning in bowl; mix well. Divide chicken salad among 4 small resealable plastic food containers; cover. Store in refrigerator.
STEP 2
Place shredded lettuce, 2 taco shells and 4 slices cheese in bottom of resealable plastic food container. Place shredded carrot and pico de gallo in small resealable plastic food containers.
- Using a fully cooked rotisserie chicken is an easy way to get cooked chicken when making chicken salad.
