Ingredients

Teriyaki Glaze

2 tablespoons
soy sauce
2 tablespoons
mirin
2 tablespoons
seasoned rice vinegar
2 tablespoons
firmly packed brown sugar
1 tablespoon
hoisin sauce

Stir-Fry

2 tablespoons
Land O Lakes® Butter
1 pound
boneless skinless chicken breasts, cut into 1-inch pieces

Rice

2 (10-ounce) packages
frozen microwaveable white rice

Stir-Fry

1 (12-ounce) package
fresh vegetable stir-fry mix

Directions

  1. Combine all teriyaki glaze ingredients in 1 1/2-quart saucepan. Cook over medium heat 5-6 minutes or until liquid is reduced to thick paste. Set aside.
  2. Melt butter in 10-inch nonstick skillet over medium heat until sizzling. Add chicken; cook, stirring occasionally, 6-8 minutes or until chicken is no longer pink in center. Add vegetables. Continue cooking, 6-8 minutes, stirring occasionally, until vegetables are crisply tender. Stir in teriyaki sauce until chicken and vegetables are well coated.
  3. Prepare rice according to package directions while chicken mixture is cooking.
  4. Spoon rice onto serving platter; top with chicken mixture.
