Cake
3/4 cup granulated sugar
1/4 cup Land O Lakes® Butter, softened
2 teaspoons vanilla extract
2 large Land O Lakes® Eggs
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup milk
Frosting
2 cups Land O Lakes® Heavy Whipping Cream
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
Milk Mixture
1 cup Land O Lakes® Half & Half
1/3 cup sweetened condensed milk
Berries
1 cup fresh raspberries
1 cup fresh blueberries
STEP 1
Heat oven to 350ºF. Grease and flour 8-inch round cake pan; set aside.
STEP 2
Combine granulated sugar, butter and 2 teaspoons vanilla in bowl; beat at medium speed until combined. Add eggs; continue beating until light and fluffy.
STEP 3
Combine flour, baking powder, baking soda and salt in bowl; mix well. Add flour mixture to butter mixture; beat at low speed until well mixed. Add 1/2 cup milk; continue beating until well mixed.
STEP 4
Pour batter into prepared pan. Bake 24-29 minutes or until toothpick inserted into center comes out clean. Cool 5 minutes; remove from pan to cooling rack. Cool completely.
STEP 5
Combine whipping cream, powdered sugar and 1/2 teaspoon vanilla in bowl; beat at high speed until stiff peaks form. Refrigerate until ready to use.
STEP 6
Combine half & half, sweetened condensed milk and 1/2 teaspoon vanilla in bowl; mix well.
STEP 7
Slice cake in half horizontally. Place one cake layer, cut-side up, onto serving plate. Carefully pour half of milk mixture over top, a little at a time, allowing it to soak in before adding more.
STEP 8
Spread 1/2-inch layer of frosting onto soaked cake. Top with second cake layer, cut-side up. Pour remaining milk mixture over cake. Frost with remaining frosting. Refrigerate until serving time. Top with berries just before serving.
