Perfectly Roasted Carrots

Sometimes simplicity is best. These sweet, tender carrots use 5 ingredients and turn out perfect every time. Serve them as a side dish any night of the week.

Ingredients

2 pounds carrots with green tops

2 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt melted

3/4 teaspoon kosher salt

1/2 teaspoon coarse ground pepper

1 teaspoon chopped fresh parsley

How to make

  1. STEP 1

    Heat oven to 400°F. Line baking sheet with parchment paper; set aside.

  2. STEP 2

    Trim green tops of carrots to 2 inches. Cut carrots in half lengthwise. Place onto prepared baking sheet. Drizzle carrots with melted butter. Sprinkle with salt and pepper. Toss to coat. 

  3. STEP 3

    Bake 20-22 minutes or until carrots are tender. Sprinkle with parsley. Serve immediately.

Look for rainbow carrots at your local farmers market.

This recipe leaves ALL the salt in. But I saw leave out the salt if you're watching your sodium intake. Use Olive Oil instead of butter to make it healthier. Once you do that, I say the recipe is healthy for everyone.
