Ground freeze-dried strawberries give the pink color and flavor to these vanilla, chocolate, and strawberry spritz sandwich cookies.

1 cup Land O Lakes® Butter, softened
2/3 cup sugar
2 teaspoons vanilla extract
1/2 teaspoon salt
1 large Land O Lakes® Egg
2 1/4 cups all-purpose flour
1/4 cup ground freeze-dried strawberries
1 cup high-quality bittersweet chocolate chips, melted
Heat oven to 375°F.
Beat butter, sugar, vanilla, and salt in large bowl at medium speed until creamy. Add egg; continue beating until well mixed. Add flour; beat at low speed until well combined.
Divide dough in half. Add freeze-dried strawberries to one-half; beat at low speed until well mixed.
Place plain dough into cookie press fitted with desired template. Form cookies, 1 inch apart, onto ungreased cookie sheets. Bake 6-8 minutes or until cookies are set and just beginning to brown around edges. Cool on cookie sheet 1 minute; remove to cooling rack. Cool completely. Place strawberry dough into cookie press; form and bake cookies as directed.
To assemble cookies, spread about 1/2 teaspoon melted chocolate onto bottom of vanilla cookie; top with a strawberry cookie, placing bottom sides together. Allow chocolate to set.
To make ahead - bake cookies ahead and freeze. Remove from freezer and allow cookies to thaw before making sandwiches.
