Caribbean Mango Chutney

1/4 cup chopped red onion

1/4 cup lime juice

1/4 cup tarragon vinegar or herb vinegar

1 large (1 1/2 cups) ripe mango, peeled, chopped

1 tablespoon honey

2 teaspoons finely chopped fresh gingerroot

2 teaspoons chopped fresh mint leaves

How to make

  1. STEP 1

    Combine all ingredients in medium bowl. Cover; refrigerate at least 4 hours or overnight. Serve with chicken, turkey or pork.
