Chocolate Almond Wafers

1 cup sugar

3/4 cup Land O Lakes® Butter, softened

3 (1-ounce) squares unsweetened baking chocolate, melted

1 large Land O Lakes® Egg

1 teaspoon almond extract

1 1/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup blanched almonds, chopped


2 (1-ounce) squares bittersweet baking chocolate

2 (1-ounce) squares white baking chocolate

2 teaspoons shortening

How to make

  1. STEP 1

    Combine sugar, butter, melted chocolate, egg and almond extract in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, baking powder and salt; beat at low speed until well mixed. Stir in chopped almonds.

  2. STEP 2

    Divide dough in half. Shape each half on waxed paper into 12x1 1/4-inch log. Wrap in waxed paper or plastic food wrap. Refrigerate 2 hours or until firm.

    Heat oven to 350°F.

    Cut logs into 1/4-inch slices with sharp knife. Place 1 inch apart onto ungreased cookie sheets. Bake 9-11 minutes or until set. Cool completely.

  5. STEP 5

    Place bittersweet chocolate and 1 teaspoon shortening in bowl. Place white baking bar and remaining shortening in another bowl. Microwave on Medium (50% power) 2-3 minutes or until melted. Drizzle cooled cookies with both glazes.
