1/2 cup Land O Lakes® Butter

1/3 cup light corn syrup

1 (12-ounce) package (2 cups) mini semi-sweet chocolate chips

2 1/2 (about 8 ounces) cups coarsely chopped shortbread cookies

2 cups miniature marshmallows

1/3 cup chopped salted peanuts

How to make

  1. STEP 1

    Line 9-inch square baking pan with aluminum foil, extending foil over edges or use 9-inch disposable foil pan; set aside.

  2. STEP 2

    Combine butter, corn syrup and chocolate chips in heavy 3-quart saucepan. Cook over medium heat, stirring constantly, 5-6 minutes or until smooth. Remove from heat; reserve 1/2 cup. Stir chopped cookies into remaining chocolate; gently stir in marshmallows.

  3. STEP 3

    Pour mixture into prepared pan; firmly press down with back of spoon. Pour reserved 1/2 cup chocolate mixture over top; spread evenly. Sprinkle with chopped peanuts. Refrigerate 4 hours or overnight until firm.

  4. STEP 4

    Lift bars from pan using foil ends. Remove foil; cut into 1-inch squares.

Tip #1

Chopped chocolate and caramel cookie candy bars can be used instead of shortbread cookies.
