Double Chocolate Cherry Drops

1 cup Land O Lakes® Butter, softened

3/4 cup firmly packed brown sugar

1/2 cup sugar

1 large Land O Lakes® Egg

1 teaspoon almond extract

2 1/4 cups all-purpose flour

1/3 cup unsweetened cocoa

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup semi-sweet chocolate chips

1/2 cup maraschino cherries, well-drained, chopped, reserve liquid


3 (1-ounce) squares semi-sweet baking chocolate

2 tablespoons Land O Lakes® Butter

2 3/4 cups powdered sugar

5 tablespoons Land O Lakes® Half & Half

1 tablespoon reserved maraschino cherry liquid

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine 1 cup butter, brown sugar, sugar, egg and almond extract in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, cocoa, baking soda and salt; beat at low speed until well mixed. Stir in chocolate chips and 1/2 cup chopped cherries.

  3. STEP 3

    Drop dough by level tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake 12-14 minutes or until set. Cool completely.

  4. STEP 4

    Melt baking chocolate and 2 tablespoons butter in 1-quart saucepan over medium-low heat, stirring occasionally, 2-3 minutes or until smooth.

  5. STEP 5

    Combine chocolate mixture and powdered sugar in small bowl. Stir in half & half and reserved cherry juice until smooth. (If frosting is too thick, stir in additional cherry juice.) Frost cooled cookies. Place 1 cherry half in center of each cookie. Let stand on waxed paper until set.
