Pear Pistachio Ginger Bars

1 1/4 cups firmly packed brown sugar

3/4 cup Land O Lakes® Butter, softened

2 large Land O Lakes® Eggs

2 tablespoons Land O Lakes® Half & Half

1 teaspoon vanilla

1 1/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

3/4 cup dried pears,   coarsely chopped

1/2 cup pistachios,   coarsely chopped

3 tablespoons chopped candied ginger


Powdered sugar

 *Substitute dried apples. **Substitute walnuts.

How to make

  1. STEP 1

    Heat oven to 350°F. Line 9-inch square baking pan with aluminum foil, extending foil over edges. Spray foil with no-stick cooking spray; set aside.

  2. STEP 2

    Combine sugar and butter in bowl; beat at medium speed until creamy. Add eggs, half & half and vanilla; beat until well mixed. Add flour, baking powder, cinnamon and salt; beat at low speed until well mixed. Add pears, pistachios and candied ginger; beat until well mixed.

  3. STEP 3

    Pour batter into prepared pan; smooth top. Bake 38-48 minutes or until toothpick inserted into center comes out clean. Cool completely.

  4. STEP 4

    Sprinkle with powdered sugar. Remove from pan, using foil ends. Remove foil; cut into bars.
