Buckwheat Chocolate Chip Cookies

Ingredients
1 cup all-purpose flour
12 cup buckwheat or whole wheat flour
12 teaspoon baking powder
12 teaspoon baking soda
12 teaspoon salt
12 cup Land O Lakes® Butter, melted
23 cup firmly packed brown sugar
13 cup granulated sugar
2 teaspoons vanilla extract
6 ounces dark (60-75%) chocolate chunks or coarsely chopped bar, 1/3 cup reserved
How to make

STEP 1
Combine flour, buckwheat flour, baking powder, baking soda and salt in small bowl. Set aside.

Whisk together melted butter, brown sugar and granulated sugar in large bowl until creamy. Add eggs, 1 at a time, mixing after each addition until well combined. Whisk in vanilla. Add flour mixture; stir just until combined. (Do not overmix.) Gently fold in chocolate. Cover; refrigerate at least 2 hours.

Heat oven to 375°F.

Scoop 2 tablespoons dough, 3 inches apart, onto parchment-lined cookie sheet (6 cookies per sheet). Press a few pieces reserved chocolate onto each cookie. Bake 8-10 minutes or until lightly browned. Remove from cookie sheet to cool.
