Pizza Frittata

1 tablespoon olive oil

2 cups frozen spinach or kale leaves

2 garlic cloves, finely chopped

8 large Land O Lakes® Eggs

Kosher salt, to taste

Pepper, to taste

1/2 cup marinara sauce

2 ounces (1/2 cup) Land O Lakes® Mozzarella Farmstyle Cut Shredded Cheese

12 slices turkey pepperoni, if desired

How to make

  1. STEP 1

    Heat oven to 425°F.

  2. STEP 2

    Heat oil in 8-inch ovenproof skillet over medium heat; swirl or brush to coat bottom and side of pan. Add spinach and garlic; cook 5 minutes or until heated through.

  3. STEP 3

    Whisk together eggs, salt and pepper in large bowl. Pour eggs over spinach in pan; stir to combine. Cook, without stirring, 6-8 minutes or until edge is cooked and center is semi-firm. Top with marinara sauce, cheese and pepperoni, if desired.

  4. STEP 4

    Transfer frittata to oven; bake 5 minutes or until eggs are cooked through and cheese is melted. For golden brown surface, broil 2-3 additional minutes.
