Ingredients
2 cups (240 grams) all-purpose flour
1 teaspoon salt
12 teaspoon baking powder
12 teaspoon baking soda
34 cup Land O Lakes® Butter, softened
12 cup firmly packed brown sugar
12 cup granulated sugar
1 teaspoon vanilla extract
12 cup (about 4 squares) crushed graham crackers
1 cup miniature semi-sweet chocolate chips
14 marshmallows
Graham cracker crumbs, as needed for rolling
Milk chocolate bar, broken into 14 pieces
How to make

STEP 1
Combine flour, salt, baking powder and baking soda in bowl; set aside. Combine butter, brown sugar and granulated sugar in another bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and vanilla; continue beating, scraping bowl often, until well mixed. Reduce speed to low. Gradually add flour mixture; beat until well mixed. Stir in 1/2 cup crushed graham crackers and chocolate chips by hand.

STEP 2
Scoop scant 1/4-cup portions dough onto parchment paper. Cover with another sheet of parchment; press into 3-inch circles. Place marshmallow in center of each dough portion; wrap dough up and around marshmallow, allowing top of marshmallow to peek out. Roll dough in graham cracker crumbs. Place on parchment-lined baking sheet. Repeat with remaining dough. Freeze at least 1 1/2 hours or until solid.
Tip: Shaped Dough

STEP 3
Heat oven to 375°F. Place 6 frozen dough balls onto parchment-lined baking sheet. Bake 12 minutes or until golden brown and marshmallows begin to toast. Remove from oven.

If desired, working one at a time, place large round 3 1/2-inch cookie cutter over cookie and spin cookie inside cutter until round and slightly thicker. Repeat with remaining cookies. Top each warm cookie with chocolate bar piece. Cool 15 minutes before serving.
Tip #1
If freezing dough overnight, add an extra 2 minutes to bake time.
