If you are a coffee fan, you'll love this flavorful shortbread-like chocolate glazed cookie.
1 tablespoon instant coffee granules
2 tablespoons hot water
1 1/2 cups Land O Lakes® Butter softened
1 cup powdered sugar
3 cups all-purpose flour
Dash of salt
1 cup real semi-sweet chocolate chips
1 tablespoon shortening
Heat oven to 350°F.
Combine coffee granules and hot water in bowl; stir until coffee is dissolved. Set aside.
Combine butter and powdered sugar in another bowl. Beat at medium speed, scraping bowl often, until creamy. Add coffee mixture to butter mixture; continue beating until well mixed. Reduce speed to low; add flour and salt. Beat until well mixed.
Shape dough into 1-inch balls; place onto ungreased cookie sheets. Flatten to 2-inch round with bottom of greased and floured glass. Bake for 11-13 minutes or until set. Cool completely.
Melt chocolate chips and shortening in 1-quart saucepan over low heat 2-3 minutes or until smooth. Drizzle over cooled cookies..

No java taste. They tasted more like flour and the chocolate would not drizzle but I got the chocolate on them. Very disappointing.
