Ingredients

Cake

1 1/2 cups
all-purpose flour
1 cup
sugar
2 teaspoons
baking powder
1/2 teaspoon
salt
1 cup
Land O Lakes® Heavy Whipping Cream
2
large Land O Lakes® Eggs
1 teaspoon
vanilla
1/2 cup
mini real semi-sweet chocolate chips

Topping

Fresh fruit, if desired

Directions

  1. Heat oven to 350°F. Grease and flour 9x5-inch loaf pan; set aside.
  2. Combine flour, sugar, baking powder and salt in bowl; set aside.
  3. Beat whipping cream in another bowl at high speed until soft peaks form. Add eggs and vanilla; continue beating just until blended. Gently stir in flour mixture and chocolate chips until blended.
  4. Pour batter into prepared pan. Bake 42-47 minutes or until toothpick inserted in center comes out clean. Run knife around edges of pan to loosen; turn out onto cooling rack. Cool completely.
  5. Cut cake into slices; serve with fresh fruit, if desired.
  6. Variation:Omit chocolate chips. Substitute 1/2 cup chopped walnuts, 1 teaspoon freshly grated lemon zest or1 teaspoon freshly grated orange zest with flour mixture.
