4 (8-ounce) bone-in, skin on, split chicken breasts
1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt, divided
2 tablespoons freshly grated lemon zest
1 teaspoon cracked black pepper
2 tablespoons fresh lemon juice
Fresh thyme sprigs, if desired
Grilled lemon slices, if desired
STEP 1
Heat gas grill on medium or charcoal grill until coals are ash white.
STEP 2
Combine 2 tablespoons Butter with Olive Oil & Sea Salt, lemon zest and pepper in bowl; mix well.
STEP 3
Loosen skin on chicken breasts; spread lemon butter mixture under skin of each breast.
STEP 4
Place remaining butter into bowl; microwave 5-10 seconds or just until melted. Stir in lemon juice.
STEP 5
Place chicken onto grill, skin-side up. Grill 8 minutes. Turn chicken; brush top of chicken with 1/3 butter mixture. Grill 8 minutes. Turn chicken again, brush with 1/3 butter mixture. Grill 8 minutes. Turn chicken again, brush with remaining butter mixture. Grill 8-10 minutes or until internal temperature reaches 165ºF and juices run clear when pierced with fork.
STEP 6
Garnish with thyme sprigs and lemon slices, if desired.
To grill lemon slices, slice lemon into 1/4 inch thick slices. Brush lightly with additional melted Land O Lakes® Butter with Olive Oil & Sea Salt. Grill, turning once, 2-3 minutes until slightly charred.
