2 tablespoons
Land O Lakes® Butter
2 1/4 cups
water
1 (14 1/2-ounce) can
stewed tomatoes with garlic, herbs and onions , undrained, chopped
2 cups
cubed peeled red potatoes
2 medium (1 cup)
carrots, sliced 1/2-inch
1 rib (1/2 cup)

dried oregano leaves
1

Chopped fresh parsley, if desired

Directions

  1. Place 2 tablespoons flour and 1/2 teaspoon salt in large resealable plastic food bag; add pork cubes. Tightly seal bag; turn bag several times to coat pork well.
  2. Melt butter in 4-quart saucepan until sizzling; add pork. Cook over medium heat, stirring occasionally, 7-10 minutes or until lightly browned. Add remaining 1/2 teaspoon salt, 2 cups water and all remaining ingredients except parsley. Cook over medium-high heat 3-4 minutes or until mixture comes to a full boil. Reduce heat to low; continue cooking 30-40 minutes or until vegetables are fork tender. Remove bay leaf.
  3. Combine remaining 1 tablespoon flour and remaining 1/4 cup water in small bowl. Stir into stew. Continue cooking, stirring occasionally, 3-5 minutes or until slightly thickened. Garnish each serving with parsley, if desired.

Love it! One of my go to dishes! I've made it numerous times. Only thing I change is to use thyme instead of oregano and whatever vegetables I have on hand. I love green beans and zucchini in it. It's a great versatile dish. You may be tempted to use oil to fry instead of butter, but it really tastes best with the butter. It's not a deal breaker, just a great flavor with butter. If you want to really amp up the flavor, brown the carrots before the pork. It takes a few minutes longer but great flavor.

This is the best pork stew recipe ever. Simply delicious, and so easy to make. I have made this numerous times, and I told my friend about it. Now her family makes it all the time. Thanks for sharing this!

I'm a vegetarian with terrible cooking skills and made this for my family it was excellent! My husband and son finished the entire thing and my husband who normally hates everything I make said "you need to make this again". Very easy to make and it's fool proof if I can do it. I've made it with pork, beef and chicken always turns out great!

This sounds delicious. I have been looking for a pork stew as the church were I attend started a Community Cafe a little over a year ago. Folks can come and enjoy fellowship and good hearty food.No cost and anyone can attend. We get donations of food and right now we have a freezer full of pork butt. This will be a great meal for all. We serve over 100 people and I am always searching for good meals.

I tweeked this recipe somewhat by using half chicken broth , half water . I sautéed the onion along with some garlic before I added the flour drenched pork, then browned the pork in the onions. I added a can of sweet kernel corn and a can of French cut green beans for the last 15-20 minutes and OMG ! This was DEELICIOUS !

This is a great recipe for two, four or more family members. It is so easy, I can make it when I come home from work and have the meal on the dinner table in no time. I have shared with co-workers and friends and they have enjoyed it and will be making it themselves as well.

This was so easy and delicious. The only changes I made was leaving the celery out (didn't have any) and adding small black beans and paprika. I doubled the recipe and it was great!

The onion should be fried either with or after the pork. More flavor!

Im making this for dinner tonight and it came out soooooo delicious. I used green chillies which added a delightful flavor to the stew. I've tasted it and I know my family will enjoy having this for dinner on this cold day.

Made this tonight for the hubs and he loved it! I scaled the recipe up since I had more meat and needed to use up potatoes- delish! Next time I will brown the pork a bit more but all in all this was wonderful. Thanks LandoLakes!

Yum!...I didn't have seasoned tomatoes on hand so instead used a can of diced tomatoes, added a garlic clove, used up four slices of prosciutto I had leftover in fridge as well as 1/2 can of Cannelini beans. I reduced the salt because of the prosciutto and substituted Sweet potatoes for the red potatoes....a great complete meal in one pot and so easy!

I'm glad I went with this recipe. I used already-cooked pork I bought from a Mexican restaurant that was too gamey to chew, and crushed tomatoes instead of chopped stewed ones. What a quick and easy way to enjoy all these ingredients I had laying around! Very delicious.
