1/4 cup Land O Lakes® Butter
2 medium (2 cups) Gala apples, unpeeled, chopped
1 small (1/2 cup) onion, chopped
1/4 cup all-purpose flour
1/2 teaspoon ground red pepper
2 1/2 cups low sodium chicken broth
1 cup Land O Lakes® Half & Half
2 cups cubed cooked chicken
1 1/2 cups cooked wild rice
1 (12-ounce) bottle beer or low sodium chicken broth
20 (3/4-ounce) slices Land O Lakes® Sharp Cheddar American Blend
Cooked crumbled bacon, if desired
*Substitute any sweet apple.
STEP 1
Melt butter in 4-quart saucepan until sizzling; add apple and onion. Cook over medium-high heat 3-4 minutes or until onion begins to soften.
STEP 2
Stir in flour and red pepper; continue cooking 1 minute. Add chicken broth and half & half. Continue cooking until mixture comes to a full boil.
STEP 3
Add chicken, rice and beer; continue cooking until heated through. Add cheese; continue cooking, stirring occasionally, until melted.
STEP 4
Top each serving with crumbled bacon, if desired.
Cooked wild rice can be purchased in cans, pouches or in the freezer case.
