Ingredients

1 cup
sugar
1/2 cup
Land O Lakes® Margarine , softened
3 to 4 (1 1/2 cups)
ripe bananas, mashed
1
@Land O Lakes® Egg
1 teaspoon
vanilla
1 1/2 cups
all-purpose flour
1 teaspoon
baking powder
1 teaspoon
baking soda
1/2 teaspoon
salt
1/4 cup
unsweetened cocoa
 
Powdered sugar, if desired

Directions

  1. Heat oven to 350°F. Grease 13x9-inch baking pan; set aside.
  2. Combine sugar and margarine in bowl. Beat at medium speed, scraping bowl often, until creamy. Add bananas, egg and vanilla; continue beating, scraping bowl often, until well mixed. Add flour, baking powder, baking soda and salt; beat at low speed, scraping bowl often, until well mixed.
  3. Drop 1 1/2 cups batter by spoonfuls into prepared pan. Add cocoa to remaining batter in bowl; beat at low speed until well mixed.
  4. Drop spoonfuls of chocolate batter in pan over banana batter. Gently swirl chocolate batter through banana batter using knife. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool completely.
  5. Sprinkle with powdered sugar just before serving. Cut into bars.

This recipe was fairly easy and had great flavor. I used three bananas and it was packed with banana flavor. It was moist and I will make it again.

I'm not a big fan of the traditional "banana bread" - but this recipe was delightful. SUPER easy, very moist, low calorie, winner. Cool thing was I actually FROZE my over ripe bananas, then took them out of the freezer for this recipe. Worked like a charm. Tip: peel the banana right away when you get them out of the freezer and place in a strainer over a bowl. As they thaw there some banana syrup/juice that drips out which might have made the bars too wet.

bananas should be very ripe ie; black. These came out very moist and my family devoured them!!

THIS ONE IS ALSO GOOD BUT I THINK IT NEEDS SOME SORT OF GLAZE OR FROSTING.
