Marbled Banana Bars

1 cup sugar

1/2 cup Land O Lakes® Margarine, softened

3 to 4 (1 1/2 cups) ripe bananas, mashed

1 large Land O Lakes® Egg

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/4 cup unsweetened cocoa


Powdered sugar, if desired

How to make

  1. STEP 1

    Heat oven to 350°F. Grease 13x9-inch baking pan; set aside.

  2. STEP 2

    Combine sugar and margarine in bowl. Beat at medium speed, scraping bowl often, until creamy. Add bananas, egg and vanilla; continue beating, scraping bowl often, until well mixed. Add flour, baking powder, baking soda and salt; beat at low speed, scraping bowl often, until well mixed.

  3. STEP 3

    Drop 1 1/2 cups batter by spoonfuls into prepared pan. Add cocoa to remaining batter in bowl; beat at low speed until well mixed.

  4. STEP 4

    Drop spoonfuls of chocolate batter in pan over banana batter. Gently swirl chocolate batter through banana batter using knife. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool completely.

  5. STEP 5

    Sprinkle with powdered sugar just before serving. Cut into bars.

This recipe was fairly easy and had great flavor. I used three bananas and it was packed with banana flavor. It was moist and I will make it again.

I'm not a big fan of the traditional "banana bread" - but this recipe was delightful. SUPER easy, very moist, low calorie, winner. Cool thing was I actually FROZE my over ripe bananas, then took them out of the freezer for this recipe. Worked like a charm. Tip: peel the banana right away when you get them out of the freezer and place in a strainer over a bowl. As they thaw there some banana syrup/juice that drips out which might have made the bars too wet.

I used ground nuts instead of the unsweetened cocoa and frosted them....excellent! Best banana bars we ever had...and so easy to make.
