3/4 cup uncooked whole wheat couscous
3/4 cup reduced-sodium chicken broth
3 tablespoons Land O Lakes® Light Butter with Canola Oil
2 teaspoons fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
1 medium (1 cup) cucumber, peeled, seeded, chopped
1 medium (3/4 cup) tomato, chopped
2 tablespoons kalamata olives, quartered
1 tablespoon sliced green onions
2 teaspoons chopped fresh mint
STEP 1
Place couscous into medium bowl; set aside. Place chicken broth and Light Butter with Canola Oil in 2-quart saucepan. Cook over medium heat 3-5 minutes or until mixture comes to a boil; pour over couscous.
STEP 2
Cover with plastic food wrap; let stand 5 minutes. Uncover; fluff with fork. Add all remaining ingredients; mix well.
STEP 3
Serve at room temperature or chilled.
