Thai Chicken Pizza

2 tablespoons Land O Lakes® Butter
8 ounces boneless skinless chicken breasts, cut into bite-sized pieces
Teriyaki Glaze
1 tablespoon mirin
1 tablespoon seasoned rice vinegar
1 tablespoon soy sauce
1 tablespoon hoisin sauce

2 teaspoon finely chopped fresh garlic 4 teaspoon freshly grated ginger rootPizza

3 cup prepared Thai peanut sauce1 1
4 cups broccoli slaw1 (12-inch) prepared thin pizza crust
3 tablespoons sliced green onions

2 cup shredded pepper jack cheese
Fresh cilantro leaves, if desired
Chopped peanuts, if desired
How to make

Heat oven to 450°F.

Melt butter in 10-inch nonstick skillet over medium-low heat just until sizzling. Add chicken; cook 4-5 minutes or until chicken is no longer pink.

Combine all teriyaki glaze ingredients in 1 1/2-quart saucepan. Cook over medium heat 4-5 minutes or until liquid is reduced to thick paste. Stir in chicken until well coated. Set aside.

Spread peanut sauce over pizza crust. Top with broccoli slaw, green onions, cheese, and glazed chicken.

Place pizza directly onto oven rack. Bake 10-12 minutes or until cheese is melted. Top with cilantro and peanuts, if desired.

Mirin is a condiment made from rice, often found in Japanese recipes. It adds sweetness and flavor. Mirin can be found in the Asian or gourmet section of large supermarkets as well as Asian markets.
