2 1/4 cups all-purpose flour
1/2 cup sugar
1/4 cup firmly packed brown sugar
3/4 cup cold Land O Lakes® Honey Butter Spread
1 cup sour cream
1 large Land O Lakes® Egg
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup chopped honey-roasted peanuts

Honey, as desired
Heat oven to 350°F. Place paper baking cups into 12 muffin pan cups or grease cups; set aside.
Combine flour, sugar and brown sugar in bowl; cut in 3/4 cup Honey Butter Spread with pastry blender or fork until mixture resembles coarse crumbs. Reserve 3/4 cup crumb mixture for topping.
Add all remaining ingredients except peanuts, additional honey butter spread and honey to remaining crumb mixture. Beat at medium speed until well mixed. Divide batter evenly among prepared muffin cups. Add peanuts to reserved crumb mixture. Sprinkle 1 heaping tablespoon on top of each muffin.
Bake 20-25 minutes or until toothpick inserted into center of muffin comes out clean. Let cool.
Serve muffins with additional Honey Butter Spread and drizzle of honey, as desired.
